A newly-elected town councillor plans to open a piano wine bar in Sawbridgeworth in the vacant former Mariposa bridal boutique.

Cllr Steve Jones has submitted a change-of-use planning application to East Herts Council for No 1 The Square.

In it, he said: “My proposed wine bar will assist in the regeneration and general attractiveness of the town, and encourage people from the local villages to visit more often.”

Steve’s Piano Wine Bar will offer alcoholic and non-alcoholic wine, locally-sourced craft beer and soft drinks.

Robert Jones, a Sawbridgeworth resident of 22 years, commenting on the plans, said that a wine bar would offer “something different, classy and enticing” in addition to local pubs. “We have long yearned for a sophisticated and ‘upmarket’ socialising establishment,” he said.

Neighbour Trula Wheeler asked about arrangements for accommodating smokers outside the premises and the location of the waste bins. She also enquired whether the premises would be fully soundproofed.

The town council’s planning committee supported the plans, which will be determined by East Herts Council.
