One Thai Bishop’s Stortford: Karate girl’s success means the chop for parents’ restaurant




A “busy” Bishop’s Stortford restaurant is to close at the end of the month – so that the owners can focus on their daughter’s England karate career.

One Thai, the first-floor eatery in Market Square above Bishop’s Butchers and Dorringtons, opened in the summer of 2021. It was the second outlet for owners Michal and Preechaya “Nuch” Wegryzn, who also have a One Thai in West Street, Ware.

But they have made the “difficult decision” to close their Stortford business on Saturday March 29 as their 15-year-old daughter Nada’s karate career takes off.

In response to a post on the Bishop’s Stortford Community Facebook page, Nuch said: “It is really heartwarming to see all the positive comments.

“Love our little restaurant, and despite being busy we decided to close due to personal reasons.

“As my daughter pursues [her] sport career and is representing England, I have to commit more and more time to her development and travel.

“After long discussion with my husband, we have made the difficult decision to close the restaurant. The last day we will be opened is 29th March. We will continue to run One Thai café in Ware.”

The Indie has followed Nada’s progression. Last April we reported that she and two other students of Bishop’s Stortford-based Pro-Karate Academy – Talia Nardelli and Annabel Changer – won gold at the England Karate Federation National Championships in Sheffield.

That came two months after Nada and Talia got their first international caps when they represented their country at the European Karate Championships in Georgia.

When One Thai opened it replaced Greedy Greek. It had previously been home to burger joint DB’s Griddle and cafés the Fat Rabbit and Ferns.

The decision to close means that Bishop’s Stortford is left with three options for lovers of Thai food: the Giggling Squid and Baan Thitiya restaurants in North Street and London Road respectively, and Hockerill Street takeaway Pukk Thai.
